This is one of my favorite dinner party recipes. It's so easy, delicious, and takes only one pan to make!
Ingredients
1 tablespoon olive oil
12 ounces (1 package) chicken apple sausage
1 large yellow or sweet onion
2 teaspoons minced garlic
1 large Granny Smith apple
1 14.5 oz can chicken broth
2 10 oz cans Rotel tomatoes with green chilies, NOT drained (spiciness of your choosing)
10 ounces Cellentani or similar pasta
½ cup heavy cream
salt and pepper to taste
1.5 cup shredded Monterey Jack cheese, divided
¼ cup green onions, thinly sliced (optional)
Instructions
Begin by dicing the sausage and onion. Heat the olive oil on medium in a large pot. Once hot, add the diced onions and sausage to the pot and cook until the onions soften and begin to brown, about 5 minutes.
While the onion and sausage are cooking, dice the apple – there’s no need to peel it. Add the apple and garlic to the pot, stirring and continuing to cook for 1-2 minutes.
Add the chicken broth, undrained Rotel, pasta, and heavy cream to the pot. Add salt and pepper to taste. Stir well, then bring to a boil. Once boiling, reduce heat, cover, and simmer for 15-20 minutes or until the pasta is cooked, stirring occasionally.
Remove from the heat, then stir in 1 cup of shredded Monterey jack cheese.
Serve while hot, topped with extra Monterey jack and thinly sliced green onions, if desired.
